One-on-one gelato making classes Vs traditional ones

You are not in school anymore, now you are trying to build a business to support your family or you already have one. Bottomline: you don’t have time or money to waste! Your time is the most precious resource you have, and this alone makes one-on-one, independent gelato making classes, really the way to go. 

If there is one thing to remember from this post is: in 2-3 days of one-on-one gelato training you can learn what it would take you 2 weeks to learn in a traditional gelato class. And here is why…

“In a traditional gelato making class setting you are sitting with 15-20 or more other students and you all are sharing one teacher. You already come with questions, you will have more questions as you go but you’ll just don’t have time to get all the answers you need. It’s great to meet different people, it’s great to visit my home country if you wish, but then you are stuck in a class where people are all at different level and have different motivations: some are there just for fun, some are ready to open and already have some training, some are far behind.. but you’ll have to follow the standard pace of that class.”

There are normally 2 kinds of gelato making classes you can attend in the US, and I have seen them all:

The gelato classes hosted by local dealers or gelato machine manufacturers

These classes could be ok, but their main goal is to show you how their specific machines work, so that you can purchase directly from them. You spend a lot of time in the kitchen because they want you to have fun and because you need time to learn to use their machines. Unfortunately chances are you could buy different gelato machines & equipment, so all the time they take to show you how their machines work would literally be for nothing. In the US these classes are normally 2 to 4 days in groups, where you really learn just the bare minimum, not enough to operate a gelato shop with solid knowledge of operations & ingredients, and especially not enough to work really from scratch. In Italy they can be 1-2-3-4 weeks, and are normally better (depending on where you go)..but you have to get there and stay there for that long! 

The gelato classes hosted by ingredient manufacturers

These classes are normally the most basic & shorter ones, and also the ones I normally don’t recommend, unless you don’t care much about your product and want to use only flavorings and powder mixes. All they teach you is how to make gelato with their specific ingredients & processes, so that you will have to buy everything from them simply because you will not learn how to make gelato from scratch. Several of my students came to me after doing these classes, because unfortunately they were not able to learn much.
